One of the benefits of being back at home with Ma & Pa temporarily is that on days like today, a grey Wednesday with work to do, I can treat myself to a lunch made up of leftovers from the Chrimbo stocks.
Today’s semi-experimental result: Prosciutto & Shropshire Blue, with black pepper mayo on granary. The cheese is mellow enough of flavour to not completely obscure the delicate ham, and produces a rather satisfying meaty combo, with that slightly metallic tang following the rich blue character.
Now back on with the “work”.
